I left Dublin to take over my uncle’s farm in 2000 and set about converting it to organic later that same year. I was lucky to be able to persuade Alison to join me in 2003, who later consented to be my wife. Our peaceful life was soon shattered by the arrival of our first child!
In its day there was a thriving kitchen garden and orchard at the farm; we have been planting heritage apple trees over the last few years. Our kitchen garden, which is Ali’s project, produces potatoes, carrots, onions and parsnips to name but a few and supplies much of our household and tea room needs.
